I LOVE pizza. I’m pretty sure we all do. I can eat pizza for breakfast, lunch and dinner. Luckily, there are recipes for (like this) for easy and yummy homemade breakfast pizza. My favorite part about these Personal Breakfast Pizza’s is that I’ve designed the recipe to cook everything all together, so it’s literally easy as pie.
By mixing 1 tbsp of sour cream in with each egg for the “sauce”, it creates texture that bakes up quiche-like. It’s also slightly less runny than just egg since we have to work some ingredients on top of it before we pop it into the oven.
I love to make my own dough using Bobby Flay’s super easy recipe here, which makes 2 full size crusts. I divide this into 6 equal parts to make mini pizzas. I use three the night before for snack size pizzas, and then wrap the other 3 parts individually in plastic wrap to use the next morning for breakfast pizzas. The dough will last well wrapped in fridge for up to 2 days.
Breakfast Pizzas

- 3 Eggs
- 3 tbsp Sour Cream
- 6 oz. Sharp Cheddar, shredded
- 2 Scallions, sliced thin
- 1-2 Green Bell Peppers, sliced thin
- 3 Slices Bacon*, uncooked and cut into very small pieces
- 1 Pre-made Pizza Dough, divided into 3 equal parts (about the size of a large orange each)
- Salt & Pepper to taste
Instructions
Preheat Oven to 500 degrees
Flatten each ball of dough into a small disk and stretch & gently form dough into desired shape on a baking sheet, pinch around the edge forming a crust to hold in the egg mixture. Two personal size pizzas should fit on one baking sheet.
Beat 1 egg with 1 tablespoon sour cream until fully combined, pour into crust (think of it as the sauce, should be about 1/4 inch deep)
Sprinkle 2 oz of shredded cheese over egg mixture
Layer bell pepper, scallions and bacon on top of cheese
Sprinkle Salt & Pepper to taste
Bake at 500 degrees for 12-14 minutes, until crust is lightly browned and toppings are cooked
Allow to cool 5 minutes before cutting and serving
Notes
*Ensure Bacon pieces are cut very small to cook through, if using ham or any fully precooked meat it can be layered under the cheese so it does not dry out. Add your own twist- substitute your favorite cheese or veggies!
